Zucchini baked in pie tastes just like apple pie. Quick and easy to make. My grandsons would not even taste it if I told them it was made with zucchini squash.

Ingredients
  • 4 cups zucchini , sliced, cooked
  • 2 tablespoons lemon juice
  • 1 1/4 cups sugar
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons cream of tartar
  • 1 dash nutmeg
  • 3 tablespoons flour
Directions
COOK
40 mins
  • Add the zucchini to other ingredients and mix well in cooking pot. It will be runny, but that is okay.
  • Dump the filling into a 9 inch crust and dot with butter.
  • Add the top crust & bake at 400 degrees for 40 minutes or until golden brown.
