Ingredients
  • 1 eggplant, sliced thin
  • 1 zucchini sliced thin
  • 1 yellow squash sliced thin
  • 2 portabello mushrooms, sliced
  • 1 red onion, sliced thin
  • 1 bunch asparagus spears, trimmed
  • 2 firm tomatoes, any color
  • seasoned salt, to taste

Prep all vegetables and coat lightly (spray) with olive oil. Wrap in foil packets and toss onto the grill for 20 minutes or until crisp-tender.
