Sweet caramelized salmon kabobs... fingerlickin good!!!

Ingredients
  • 1 1/2 pounds Atlantic salmon (the farm raised stuff is a little bland)
  • 1 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup water
  • wood skewers
Directions
Cut the salmon into 1 - 1 1/4 inch wide strips leaving the skin on. Mix together honey, soy sauce, and water. I'm not big on measuring so I go by taste. The above amounts might be long on water and short on honey. Make it your own!! Anyway, poke the salmon with skewers and arrange in a deep pan; Pyrex 9X13 works well. Pour the marinade over and cover. Soak and rotate salmon for at least 8 hrs, overnight is preferred. Grill salmon finishing on the skin side, but BEWARE....VERY MESSY!!!! Peel off skin and dig in. Goes well with grilled zucchini or squash chips.
