Ingredients
  • 1 pound bacon, room temperature (regular bacon, not thick sliced)
  • 1 1/4 cups brown sugar
  • 1 tablespoon cinnamon, optional

  • Preheat oven to 350° F. Cut each slice of bacon in half, crosswise.
  • In a shallow bowl, mix the sugar and cinnamon together and thoroughly coat each slice of bacon.
  • Twist slice (or leave flat) and place on rack in a broiler pan. You can also use a jellyroll pan with a rack in the bottom but do not have bacon laying directly on the pan.
  • Place in the preheated oven and bake for 10 to 15 minutes. Remove from the oven and turn the bacon over. Bake for an additional 10 minutes or until bacon is crisp and sugar is bubbly. Watch closely as the sugar burns quickly.
  • Cool on foil. Serve at room temperature. These may be made hours ahead and left at room temperature.
Note: There will be a buildup of grease and sugar in the broiler pan that is hot and sticky. To remove, first try to remove as much grease as possible by dabbing with paper towels. Then add hot water to the broiler pan and allow to set. The sticky gooey mess will loosen with the hot water and then it should be easy to remove.

The tantalizing aroma of bacon, brown sugar and cinnamon is irresistible. These morsels are fine for either a buffet brunch or appetizer.
