Melt 2 tablespoons butter and add garlic powder or garlic, onion and peppers. Cook over medium-high heat, stirring occasionally, until crisply tender (3-5 minutes). Stir in basil.
Heat oven to 400°F. Spread one side of bread slices with 1 tablespoon butter. Place onto ungreased baking sheet, buttered-side up. Bake for 5-10 minutes or until edges are golden brown. Cool slightly.
TIP: This part may be done several hours before final steps.
Divide pepper mixture evenly among toasted bread and sprinkle each with 1 tablespoon cheese. Continue baking until other side is toasted and cheese is bubbly. Serve warm.
To spice this up, increase the amount of garlic and/or add a little garlic to the butter that is spread on the bread slices.
