Banana Pineapple Cake 2 Recipe

Ingredients
  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups bananas, chopped
  • 1 cup crushed pineapple, drained
  • 1 cup vegetable oil
  • 2 eggs, beaten
  • 1 1/2 teaspoons vanilla
  • 1 cup pecans, chopped (optional)
  • FOR ICING:
  • 8 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • 4 1/2 cups powdered sugar
  • 1 teaspoon vanilla
Directions
Preheat oven to 350 degrees. Grease a 9x13 inch dish or pan.

Mix flour, sugar, baking soda, cinnamon and salt together by hand and set aside. DO NOT use mixer.

Next, mix bananas, crushed pineapple (drained), vegetable oil, eggs (beaten with fork) and vanilla with large spoon or whisk.

If desired, add pecans.

Then pour in the dry ingredients and mix with spatula until well blended.

Then pour into prepared pan. Bake 40-45 minutes until toothpicks comes out clean; cool well on wire rack.

For Icing (optional), cream together cream cheese and butter. Slowly add powdered sugar and vanilla. Mix with mixer until smooth.
