Ingredients
1 cup salad oil
2 cups sugar
2 cups self-rising flour
2 Eggs
1 cup raisins
1 cup pecans or walnuts
3 cups apples, raw and chopped
1 teaspoon vanilla
1 box vanilla instant pudding
Directions
Peel and chop apples. Beat oil and sugar until creamy. Add eggs, one at a time, beating well after each addition. Add pudding and flour, one cup at a time. Add vanilla, apples, raisins and nuts. Mixture will be stiff. Bake in a 13 x 9 pan or tube pan that has been greased and floured. Bake in 350° oven for 50-60 minutes. This cake is good with caramel icing but may be served without icing.
