This wild rice recipe is so good and so satisfying that it could be served as a main dish rather than just as a side dish. The combination of ingredients, including celery, pine nuts, craisins, dates, mushrooms, and garlic, give this wild rice dish a variety of wonderful flavors and textures.

Ingredients
  • 1 cup wild rice - dry
  • 1 cup celery - chopped
  • 8 ounces mushrooms - sliced
  • 1 teaspoon garlic - chopped
  • 2 tablespoons margarine
  • 1 tablespoon olive oil
  • 3 ounces pine nuts
  • 1/2 cup craisins
  • 1/2 cup dates - chopped
  • salt and pepper - to taste
Container:large skillet, small skillet, large pot
Directions
  • In a large pot, cook the wild rice according to package directions.
  • Drain and set aside.
  • In a large skillet, heat 2 tablespoons of margarine and one tablespoon of olive oil over medium heat.
  • Add sliced mushrooms and sauté for 10 minutes, stirring occasionally.
  • Add chopped garlic, celery, craisins and dates. Stir to combine.
  • Sauté for 8-10 more minutes.
  • Shut off the heat.
  • In a small skillet, toast the pine nuts, stirring occasionally. Watch carefully so that they don't burn. It takes approximately 5 minutes to get them nicely brown.
  • Add these to the rice mixture, stir and serve with your favorite fish or poultry.
