Sauteed Vegetables with Ricotta Recipe

Ingredients
  • 1 cup low fat ricotta cheese
  • 1 cup tomatoes, chopped
  • 1/2 cup bell peppers, chopped
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • Salt
  • Pepper
  • Basil
Directions
Sauté vegetables in oil. Stir in ricotta cheese and spices. Serve over brown rice or quinoa.
