Ingredients
  • 1 cup butter at room temperature
  • 2 cups plus 2 tablespoons sugar
  • 2 large eggs
  • 1 teaspoon grated lemon peel
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/3 cup milk or buttermilk
  • 4 cups plums - unpeeled, pitted and sliced
  • 1/2 teaspoon cinnamon

  • Preheat oven to 325° F.
  • Beat butter, one cup of sugar until creamy.
  • Add eggs one at a time making sure that each is incorporated before adding the next.
  • Mix in the lemon peel.
  • In a small bowl, combine the flour, baking powder, salt, nutmeg and cinnamon. Stir until all is blended.
  • Mix half of the flour mixture into the butter mixture.
  • Add the milk followed by the rest of the flour.
  • Stir just until incorporated.
  • Scrape into a buttered, floured 8 inch glass or ceramic baking pan.
  • Overlap the plum slices in rows or circles on top of the batter.
  • In a small bowl, mix the remaiing 2 tablespoons of sugar and cinnamon.
  • Sprinkle over the plums.
  • Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
