Sugar Free Banana Nut Bread Recipe

Ingredients
  • 6 bananas (large)
  • 2 teaspoons Baking Soda
  • 1/4 cup boiling water
  • 12 packets Splenda (or your choice of artificial sweetener)
  • 1/2 cup solid shortening
  • 2 Eggs
  • 2 teaspoons Vanilla
  • 1 teaspoon Salt
  • 2 teaspoons baking powder
  • 2 cups flour
  • 2 cups chopped nuts
Directions
Mix baking soda and 1/4 cup boiling water. Add soda water to bananas, stir and set aside. Cream sweetener and shortening. Beat eggs; add remaining ingredients, except nuts, mix well. Add bananas, soda mixture, then nuts. Bake 350° for 30 to 45 minutes or until toothpick inserted in center comes out clean. Makes 2 loaves.
