• In a large mixing bowl, add sugar, eggs, applesauce, oil, and vanilla
• Beat until well blended
• Combine flours, cocoa, salt, baking soda, cinnamon, and baking powder
• Gradually beat into creamed mixture until blended; stir in zucchini
• Transfer to two 8 x 4 inch greased and floured pans
• Bake at 350° for 40 to 45 minutes until toothpick inserted comes out clean
• Cool for 10 minutes before removing from pans to wire racks
