Ingredients
  • 1 30 oz. can of black beans - rinsed and drained
  • 1 16 oz. can of diced tomatoes with green chilies- drained
  • 1 12 oz. can of shoe peg corn - drained
  • 1 cup diced green pepper
  • 1/2 cup chopped green onion or red onion
  • 1 1/2 cups zesty Italian salad dressing
  • salt and pepper to taste
Directions
  • In a medium sized bowl, combine black beans, tomatoes, onions, green peppers, shoe peg corn, and any other ingredients desired.
  • Mix in the zesty Italian dressing.
  • Add salt and pepper to taste, stir well, and chill.
