Raisin and Oatmeal Cookies Recipe

Ingredients
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 pound unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 eggs, large
  • 2 teaspoons vanilla
  • 1 cup raisins
  • 3 1/4 cups oatmeal, old fashioned*
Container:cookie sheets, greased well
Directions
  • Preheat oven to 350°F.
  • Cream butter and sugar in a large bowl. Add eggs and vanilla and beat to combine.
  • In a medium bowl, mix the first 6 dry ingredients together and gradually add this to the creamed mixture until well blended. Stir raisins and oatmeal into mixture.
  • On the prepared cookie sheet, drop 1 heaping tablespoon of dough per cookie.
  • Bake 8 to 12 minutes. Remove pan from oven. Leave cookies on baking sheet for 1 to 2 minutes, then transfer to a wire cooking rack.

    *Do not use instant or quick cooking oatmeal.
