Sweet and Crunchy Noodle Slaw Recipe

A quick throw-together salad that provides plenty of crunch with cabbage, water chestnuts, sunflower seeds, and cashews. The sweet dressing mixture provides just the right accent to bring the flavor of all the ingredients together.

Ingredients
  • 2 packages ramen noodles - chicken flavored
  • 16 ounces shredded coleslaw mix
  • 1 can mandarin oranges - 11 oz., drained
  • 1 can water chestnuts - 8 oz., drained
  • 1/2 cup sunflower seeds
  • 1/2 cup cashews
  • DRESSING:
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/3 cup white wine vinegar
  • 2 seasoning packets from chicken flavored ramen noodles

  • Place the ramen noodles in a small bowl and cover with warm water. Soak until noodles have softened, approximately 15 minutes.
  • Whisk together all the dressing ingredients until well mixed.
  • Drain the noodles once they are softened and cut into smaller lengths so it is easier to mix the noodles with the other ingredients.
  • Combine the noodles with the rest of the ingredients except for the cashews. Stir to mix ingredients.
  • Pour dressing over salad; toss to cover evenly. Place the salad in the refrigerator for 2 to 3 hours before serving so that it is thoroughly chilled.
  • Add the cashews just before serving.

"We loved the different textures in this salad. We have had similar salads before but usually the ramen noodles were crunchy. The soft noodles were a nice change; the water chestnuts, sunflower seeds and cashews added some crunch. I will definitely make this again."
