Ingredients
  • 4 to 5 lbs. of boneless skinless chicken breast
  • 2 cups diced celery
  • 2 cups dice carrots
  • 1 1/2 cups chopped onions
  • 2 cans diced tomatoes - large can (28 oz.), do not drain
  • 2 cans black beans - 15 oz., drain and rinse
  • 2 cups chicken broth
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon salt
  • 1/2 cup buffalo wing sauce (add more if desired)
  • blue cheese - crumbled

  • Cut chicken breast into chunks, approximately 1-inch.
  • Prepare other ingredients as indicated.
  • Combine all the ingredients in the slow cooker, excluding the buffalo wing sauce and the blue cheese.
  • Place the cover on the slow cooker and cook on high for 1 hour. Turn down to low and cook for 6 to 7 hours. Or cook on low for 8 to 9 hours.
  • About 20 to 30 minutes before serving, add the buffalo wing sauce. Cover again and allow the chili to finish cooking.
  • Can be served with crumbled blue cheese. This is optional.
