BROCCOLI AND SPINACH CASSEROLE Recipe

Ingredients
  • 1 package frozen chopped broccoli, thawed and drained (10 ounce pkg)
  • 1 package frozen chopped spinach, thawed and drained
  • 1 teaspoon dried Italian seasoning
  • 1 cup sour cream
  • 1 cup creamed cottage cheese
  • 1/2 cup baking mix
  • 1/4 cup butter, melted
  • 2 Eggs
  • salt and pepper to taste
  • 1 tomato, peeled and thinly sliced
  • 1/4 cup Parmesan Cheese, grated
Directions
Preheat oven to 350°. Grease a square baking dish and spread broccoli in in dish. Top with spinach. Beat sour cream, cottage cheese, Italian seasoning, baking mix, butter and eggs with an electric beater, 1 to 2 minutes. Pour over spinach. Arrange tomato slices on top, sprinkle with Parmesan cheese, salt and pepper. Bake until golden brown and knife inserted halfway between center and edge comes out clean, about 30 minutes. Cool 5 minutes. Serves 6 to 8.
