Preheat oven to 375. Combine in a 9x13 casserole dish:
1 3/4 cups lentils (rinsed well)
2 cups water
1whole bay leaf
2 teaspoons salt
1/4 teaspoon pepper
1/8 teaspoons of marjoram, sage & thyme
2 large onions, chopped
2 cloves garlic, minced
2 cups of canned tomatoes
Cover tightly with tin foil and bake 30 minutes. Uncover after 30 minutes and stir in :
2 large carrots, sliced 1/8 inch thick
1/2 cup thinly sliced celery
1 green pepper, chopped
2 Tbs finely chopped parsley
Bake 40 minutes more. Cover with cheese and melt.
