Butternut Squash Soup 11 Recipe

Ingredients
  • 1 Butternut Squash, chopped
  • 1 onion, diced (medium)
  • 1 Eating apple, chopped
  • 2 tablespoons butter
  • 1/2 pint Vegetable Stock
  • 1 in Coconut milk
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon mild curry powder
Directions
Melt butter in a saucepan and add onions and apple, cook until golden brown.

Add the butternut squash to the onions and apple and fry for a further few minutes.

Add the stock, nutmeg and curry powder. Bring to boil, lower the heat and simmer for 30 mins.

Remove from the heat, add the coconut milk and blend until smooth.

Add further liquid if necessary.

Season to taste.

Return to pan and heat.

Serve with crusty bread
