Val's Vegetarian Taco Salad Recipe

Ingredients
  • 1 head iceburg lettuce, chopped
  • 1 bunch green onions, chopped
  • 2 tomatoes, chopped
  • 2 cucumbers, diced
  • 1 can sliced black olives, drained (small can)
  • 1 can chili beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 12 ounces grated cheddar cheese or Mexican mix cheese
  • 1 package dry taco seasoning
  • 2 cups mayonaise
  • 1 package crushed tortilla chips
Directions
Mix all salad ingredients together except dressing, cheese, and tortilla chips. When ready to serve, mix the mayo and dry taco seasoning together and mix with the greens, then add the cheese and chips. Enjoy!
