Edamame Pesto Sauce Recipe

Ingredients
3 cups fresh basil leaves (not a packed cup)
1 cup cooked edamame (I buy frozen and then boil them to the package directions)
1/4 cup pine nuts or almonds
Olive oil - will use between 1/4 cup if not more
Salt & pepper to taste
1 clove garlic (optional)
Parmesan cheese (optional)
Directions
In a food processor, add basil, edamame, nuts, and optional ingredients; garlic and parmesan cheese. As the pesto is being processed, add olive oil slowly. Can make as thin or thick as you'd like - can always add more olive oil later. Add salt and pepper to taste.
Can be used for pasta, pizza, as a dip, etc.
