Famous Mushroom Pot Roast Recipe

Beef roast with gravy is the perfect Sunday meal. You can make it just like you remember back in the good old days with this fantastic recipe. Don't forget the mashed potatoes and corn to go with the gravy.

Ingredients
  • 3 1/2 pounds beef roast
  • 2 tablespoons oil
  • 2 cups onion, sliced
  • 1/4 cup water
  • 1/4 cup ketchup
  • 1/3 cup cooking sherry
  • 2 cloves garlic, minced
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon marjoram
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon thyme
  • 1 bay leaf
  • 1 can mushrooms, sliced (6 ounce can)
  • 1/4 cup cold water
  • 2 tablespoons flour

Coat roast with flour. Brown on both sides in oil over medium-high heat.

Add onion to pot.

Combine water, catsup, sherry, garlic, mustard, marjoram, rosemary and thyme. Add to meat with bay leaf. Simmer, covered, for 2 hours or until tender.

Remove meat and set aside. Remove bay leaf; skim off any excess fat. Add mushrooms.

For gravy, combine cold water and flour until dissolved. Stir into juices and cook until thick and bubbly.
