  • 1 pound pork sausage
  • 6 ounces bacon
  • 1 teaspoon olive oil
  • 1/2 cup shredded Cheddar cheese
  • 1 teaspoon pepper
  • 5 eggs
  • 3 egg whites
  • 1 cup milk

Position oven rack at the center of the oven; preheat to 325 degrees. Coat a nonstick muffin tin with cooking spray.

Fry sausage in a large skillet, 6-7 minutes, drain.

Fry bacon until crispy; drain. Cut bacon into small pieces.

Combine sausage, bacon and cheese together.

Whisk eggs, egg whites and milk in a bowl. Divide the egg mixture evenly among the prepared muffin cups. Sprinkle a tablespoon of the sausage, bacon and cheese mixture into each cup. Bake until the tops are beginning to brown, around 30-35 minutes.

Let cool on wire rack for 5 minutes.
