1 package codfish (1 lb)
7 potatoes
1 onion
2 cloves garlic
5 eggs
1/4 cup olive oil
1/2 teaspoon black pepper
2 teaspoons chopped fresh parsley
12 black olives

Soak codfish overnight and drain water at least twice. Boil codfish; once boiled drain water and break-up codfish to smaller pieces.
Peel potatoes and julienne them. Fry potatoes until golden brown. While waiting for potatoes to fry, crack eggs and beat in bowl to be added last.
Next thinly slice onion and garlic and put in sauce pan along with olive oil. Stove to be on medium heat.
When onion is cooked (lightly golden color), lower stove to low. Add black pepper and codfish. Mix together, add fried potatoes, and stir.
Add egg and mix together until egg mix is cooked. Make sure to continuously stir.
Sprinkle with parsley and evenly dispose the olives on top.
Ready to serve.
