Ingredients
1 eggplant (medium)
1/2 cup onion-chopped
2 cups chunky spaghetti sauce
1 package mozzarella cheese shredded (8 ounce pkg)
Directions
Place eggplant slices and onion in casserole dish with a little water, cover and microwave 5 minutes. Drain off water. Pour on spaghetti sauce. top with cheese. Bake at 450° until cheese starts to brown and get bubbly.
