In a medium size bowl, combine the stock and stuffing. Mix, letting the stuffing soak up the liquid.
In a large bowl, combine turkey, celery, onion, egg, salt and freshly ground black pepper. Add in the stuffing mixture to the turkey and mix well.
Turn meatloaf mixture out onto prepared baking sheet and shape it into a loaf. Drizzle with olive oil. Bake until brown and cooked through, about 1 hour.
