Country Ham Casserole Recipe

Leftover ham, potatoes, mushrooms, broccoli (or peas, carrots, etc.), and cheese for a tasty treat... easy to double for larger servings.

Ingredients
1 cup shredded or cubed ham
2 medium potatoes, (steamed for 20 min)
1 tablespoon butter
1/2 cup fresh sliced mushrooms
1 scallion thinly sliced
1/2 broccoli cut in small flowerets
1 clove garlic, grated
1/2 package country gravy mix
1/2 cup water
1/2 cup milk
1/2 cup grated cheddar cheese

While steaming potatoes, prepare your choice of ham; set aside.
In a medium non-stick pan, melt the butter.
Saute mushrooms and scallions until tender. Turn down heat to low to simmer and add broccoli and garlic.
Add water to gravy mix and add to sauce pan. Increase heat and stir in milk, stirring often. It will thicken.
Once thickened, turn down the heat and add the ham, potatoes (cut in half then sliced), and grated cheese; stir to mix ingredients.
Turn into a 9 x 9 pan sprayed with cooking spray. Bake at 350 degrees for about 30-40 minutes.
You can add a layer of cheese for a brown cheesy crust.
