  • 1 egg white, beaten stiff but not dry
  • 1/2 cup dark brown sugar
  • 1/2 cup light brown sugar
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups whole pecans

Note:You can use all light brown sugar if you do not have both dark and light available.
  • Sift sugars, flour, and salt. Fold in egg white and vanilla. Fold in nuts carefully.
  • Drop small bits (2 or 3 pecans per cookie) on cookie sheet with buttered parchment paper. Bake at 275 degrees for 20-30 minutes.
