Ingredients
  • 2 pounds ground beef
  • Salt and pepper
  • 1 small onion
  • Garlic clove or garlic powder (optional)
  • 1 can red kidney beans, drained
  • 1 can whole kernel corn, drained
  • 2 cans tomatoes with juice
  • 1 can tomato sauce - small can
  • Creole seasoning or little chili pepper
  • 1/2 cup processed cheese (Velveeta)

  • Brown ground beef with onion, garlic, salt, and pepper. Add beans, corn, tomatoes, and tomato sauce. Add seasonings to your taste.
  • Simmer for 30 minutes to an hour. Just before serving, Stir Velveeta into the stew until it melts.
  • Note: If you like, chopped bell pepper or sweet banana peppers can be added to onion and beef.
