Make-Ahead Mashed Potatoes Recipe

I usually make these early in the morning and put them in the slow cooker for our afternoon meal. But they can also be made a day or two in advance and baked in the oven covered at 325 for 50-60 minutes.

Ingredients
  • 5 pounds potatoes, peeled, quartered
  • 8 ounces cream cheese, softened
  • 8 ounces sour cream
  • 1/2 cup milk
  • 2 teaspoons onion salt
  • 1 teaspoon seasoned salt
  • black pepper, to taste

  • Place potatoes in a large pot of salted water. Bring to a boil. Cook until tender, 20-25 minutes.
  • Drain and mash. Beat in cream cheese, sour cream, milk and seasonings.
  • Transfer to a serving dish.

"It was nice to be able to make this the day before so I didn't have that mess just before trying to serve a meal. I baked them in the oven for an hour before we ate and they were ready to serve just when we were ready to eat. They tasted great too!"
