Easy Egg Bake Recipe

A tasty egg, ham, and hash brown casserole great for breakfast or brunch. Quick and easy!

Ingredients
  • 16 ounces shredded hash browns, thawed and refrigerated
  • 16 ounces ham
  • 1 cup shredded cheddar cheese
  • 6 eggs
  • 3/4 cup half & half
  • 1/2 cup ricotta cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon flour
  • 1/2 cup sweet onion, diced
  • 1 red pepper, chopped
  • 4 ounces diced green chile peppers
Directions
Preheat oven to 350°. Spray 9" square baking dish with a non-stick spray.
Spread hash browns evenly in baking dish.
Layer ham and shredded cheese over hash browns and set aside.
In a bowl, combine remaining ingredients. Stir until well blended.
Pour over hash browns in baking dish.
Bake 45 minutes, uncovered.
Cut into squares and serve warm.
