Ingredients
  • CATFISH:
  • 1 1/2 pounds catfish filets
  • 1/2 cup parmesan cheese
  • 1 tablespoon dried minced onions
  • 1/2 cup yellow cornmeal
  • 1/4 teaspoon black pepper, ground
  • 1/2 teaspoon garlic salt
  • 1 teaspoon paprika, ground
  • 1/3 cup skim milk
  • 1/2 tablespoon salt
  • 2 whole, fresh lemons
  • HUSH PUPPIES:
  • 2/3 cup cornmeal - yellow
  • 2/3 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/3 cup onion - finely diced
  • 1/8 teaspoon black pepper
  • 1/2 cup milk - fat free
  • 1 teaspoon cider vinegar
  • 2 tablespoons vegetable oil
  • 3 egg whites - lightly beaten
  • non-stick cooking spray

Baking Fish
  • Set oven temperature at 400° F and preheat. Using a glass or metal baking pan, line inside with foil. Coat foil surface where the filets will be laying as they bake, with cooking oil to keep each filet from sticking.
  • Pour milk into a small mixing bowl or shallow dish, so each filet can be immersed in the liquid in order to fully coat both sides with milk. Combine cornmeal, paprika, salt, pepper, onion flakes, garlic salt, and parmesan cheese with milk in another baking dish.
  • Dip filets into milk. Then place filets in cornmeal mixture and coat thoroughly for baking.
  • Place filets in the lined baking pan and bake for 15-20 minutes or until the fish flakes easily with a fork.
Hushpuppy Batter Preparation
  • Preheat oven to 425° F.
  • Combine the first eight ingredients in a medium mixing bowl.
  • In a small bowl combine the vinegar in with the milk.
  • Add the milk mixture, oil and eggs whites to the dry ingredients just until the corn meal is moistened - do not over stir.
  • Spray muffin tin with non-stick cooking spray.
  • Spoon the batter by one tablespoonful into each muffin tin.
  • Bake for 12-15 minutes or until the hush puppies are lightly browned.
  • Remove immediately from the tins.
