Southwestern Chili Recipe

Ingredients
  • 2 pounds ground beef
  • 1 cup celery - diced
  • 1 cup onion - diced
  • 2 green pepper (or red, yellow, orange peppers)
  • 6 cans chili beans - including juice
  • 2 cans tomato sauce (15 oz.)
  • 2 cans corn or 1 frozen bag (thawed)
  • 1/2 cup sugar
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon Mexican seasoning
  • 1/4 teaspoon garlic powder
  • 2 teaspoons chili powder

Place 1/2 inch of water at the bottom of your frying pan. Brown the hamburger with the celery, onion, and peppers so they can sweat. Do not drain the pan when the meat is brown.

In a slow cooker, place all of the second set of ingredients on low heat. Add the hamburger and vegetables. Let the chili heat slowly for 30 minutes. Taste the chili and add sugar and chili pepper to taste. If you end up adding more than 1/2 tsp. chili pepper add another 1/4 tsp. of cayenne pepper also.

Serve the chili with:

Shredded or cubed cheeses, sour cream, red pepper flakes, parmesan cheese, crackers
