Ingredients
  • 2 refrigerated pie crusts
  • 2 cups beef, shredded, cooked
  • 4 1/4 ounces green chilies, diced
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons milk
  • 1/2 cup sour cream
  • 1/2 cup salsa

Preheat oven to 425°.

In a bowl, combine the beef, chilies and cheese. Leftover roast beef works great for this, otherwise make your favorite recipe for the beef or buy the precooked roast beef at the market.

Unroll one crust and place on baking sheet. Place beef mixture in 4 piles on crust. Place other crust on the top. Using a pizza cutter, cut crusts into 4 pieces, creating 4 pockets with beef mixture in the middle. Seal edges with a fork and cut a slit in the top for steam to escape. Brush milk over the top and edges. Bake for 12-15 minutes.

Top with sour cream and salsa. A green salad goes perfect on the side.

"I used Pillsbury pie crust because I think this is the flakiest. Good idea for leftover beef roast that I had. I thought it could have used a little more spices in the beef. Next time I might try added some. Great for a weeknight."
