  • 20 ounces Italian seasoned ground turkey
  • 1 cup chunky garden vegetable spaghetti sauce - meatless
  • 2 eggs - slightly beaten
  • 1 cup soft bread crumbs - (1 slice of bread)
  • 1/4 cup onion - finely chopped
  • 2 cloves garlic - finely minced
  • 1/2 teaspoon Italian seasoning or seasoning of choice
  • 8 drops fish sauce - optional
  • 1/2 teaspoon oregano - dried
  • 1/2 teaspoon ground mustard
  • 10 ounces frozen spinach - thawed and squeezed to remove all of the liquid
  • 1/2 cup mozzarella cheese - shredded

Place spaghetti sauce in a medium sized mixing bowl. Add bread crumbs, garlic, onion, basil, mustard and oregano. The bread crumbs can be made by toasting a slice of bread and then breaking it into crumbs.

Break the ground turkey into small pieces and add to other contents in the bowl. Fish sauce is added to enhance the flavors, so it is optional and can be added if desired. Mix all ingredients together thoroughly.

Remove mixed turkey roll ingredients and place on a plastic cutting sheet, a non-stick baking sheet, or wax paper. Roll out the mixture so that it is one inch thick or less and formed into a rectangle approximately 9 inches wide by 13 inches long.

Preheat oven to 350°F.

Add pieces of chopped spinach over the top surface of the turkey. Then add the shredded cheese over the chopped spinach. Roll up the turkey mixture starting on the long edge, jelly roll style. Pinch the ends and the finished rolled edge of the roll to keep the spinach and cheese from melting out.

Coat a baking dish or pan with non-stick cooking spray. Place the turkey roll, seam side down, on the baking dish or pan. Bake turkey roll until the meat reaches a temperature of 165°F, approximately 60 minutes. When fully cooked, remove from the oven and allow it to sit for 5-10 minutes before serving. Garnish with heated spaghetti sauce when served.
