Mexican Rice with Chicken Recipe

Ingredients
  • 1 whole chicken
  • 1 package white rice (small bag)
  • olive oil
  • 4 tablespoons ground cumin
  • 4 tablespoons ground garlic
  • 1/2 can tomatoes & chili pepper
Directions
Boil chicken- save broth. Coat bottom of skillet with olive oil, add rice to skillet and toast/ lightly brown rice. Add chicken broth enough to cover rice, season to taste. Add 1/2 can tomatoes. Steam rice on low heat. Add chicken and extra broth to desired consistency.
