Rigatoni with Beef and Garden Vegetables Recipe

Ingredients
  • 1 pound ground chuck or sirloin
  • 1 clove garlic (medium clove)
  • 1 onion (large)
  • 4 fresh tomatoes
  • 1 can tomato paste (6 oz. can)
  • 1 tablespoon sugar
  • 2 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 package rigatoni (16 ounce pkg)
  • Vegetables
  • 3 carrots (medium)
  • 1/4 pound fresh green beans
  • 3 zucchini (medium)
  • 1 red or green pepper
Directions
Cook ground beef and drain. Chop garlic fine, chop onion, dice tomatoes and add to ground beef along with tomato paste, sugar, salt and pepper. Cook for 30 min on low. Cook rigatoni and drain. Cut carrots, zucchini and pepper, then snap the beans. In 4 qt. saucepan--over high heat in 1" boiling water--heat carrots and green beans until boiling. Reduce heat to low, cover and cook for 5 minutes. Add zucchini and pepper and cook for 5 min or until almost tender, stirring occasionally. Drain. Add vegetables to meat mixture and pour over rigatoni. This is great in summertime, cooked with garden fresh vegetables.
