Yosemite Sam's Sour Dough Ugly Recipe

Toast bread to lightly toasted. Beat two eggs & cook as you would a small omelet folding in baby spinach. Salt & pepper as needed. While omelet is still hot, spread spicy ranch dressing on toasted bread and place spinach omelet on one slice of toast. Place pepper jack cheese over omelet and then two slices of bacon. Cover with other slice of toast. May need to slice sandwich in half as this sandwich is a handful.
