Beef stew w/ bacon, onion and sweet potatoes Recipe

Ingredients
  • 1 pound stew beef
  • 2 Sweet potatoes (peeled and cut) (medium)
  • 1 can beef broth (14.5 ounce can)
  • 1 onion cut into chunks (large)
  • 2 slices thick cut bacon, diced
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon Salt
  • 1/4 teaspoon pepper
  • 2 tablespoons cornstarch
Directions
1. Coat slow cooker with cooking spray

Combine all ingredients except cornstarch in slow cooker, mix well, cover and cook 7 - 8 hours on low or 4 to 5 hours on high.

2. With slotted spoon, transfer beef and vegetables to a serving bowl and cover to keep warm. Turn slow cooker to high. Combine cornstarch with 2 T. water, mix well. Stir into juices; cover and cook 15 minutes or until thickened. Spoon over beef and vegetables.
