Lentils, Brown Rice and Bacon Recipe

Ingredients
  • 1 tablespoon oil
  • 1 red pepper, chopped (large)
  • 1 onion, chopped (large)
  • 2 cloves garlic, chopped
  • 1 cup dried lentils
  • 1 cup brown rice
  • 1/2 cup chopped bacon
  • 2 cups water
  • 1 can chicken broth
  • 2 tablespoons white vinegar
  • 1 1/2 tablespoons soy sauce
  • Green onions, sliced
Directions
Heat oil in saucepan. Add pepper, onion and garlic; sauté about 5 minutes. Add lentils, rice, bacon, water and broth. Simmer, covered, stirring occasionally, 35 minutes or until rice and lentils are tender. Remove from heat and stir in vinegar and soy sauce. Sprinkle with green onion.
