This creamy rice casserole has the combined flavor of chicken and ham to make it hearty and delicious. This is a great casserole for hungry appetites. Serve it with a simple side salad or a vegetable and you have a complete meal.

Ingredients
  • 1 package long grain and wild rice mix (6 ounce pkg)
  • 2 cups cubed cooked chicken
  • 1 cup cubed fully cooked ham
  • 1 can condensed cream of chicken soup, undiluted (10 3/4 ounce can)
  • 1 can evaporated milk (12 ounce can)
  • 1 cup shredded Colby cheese
  • 1/8 teaspoon pepper
  • 1/4 cup grated Parmesan cheese

  • Cook rice mix according to package directions. Transfer the mixture to a greased 2 qt. baking dish.
  • Top with chicken and ham.
  • In a bowl, combine the soup, milk, Colby cheese and pepper; pour over the chicken mixture. Sprinkle with the Parmesan.
  • Bake, uncovered at 350° F. for 25-30 minutes or until bubbly.
