Mashed potatoes that are still creamy and delicious and can be made in advance! Perfect for holidays where there is enough craziness going on to have to worry about mashing the potatoes. Make them a day in advance to make your life even easier.

Ingredients
  • 15 pounds potatoes
  • 24 ounces cream cheese, softened
  • 2 1/2 cups sour cream
  • 1 cup butter
  • 3 teaspoons salt

Peel and cook potatoes in water until fork tender; drain.

In a large bowl, mash the hot potatoes.

Cut cream cheese into small pieces and add to potatoes, along with butter. Beat well.

Add sour cream and salt. Beat well.

If they're too thick, add some cream.

Pour into a greased casserole dish and bake at 350 degrees F for 45-60 minutes or potatoes can be placed in a slow cooker to be kept warm.
