Cheesy Mexican Lasagna Recipe

A layered casserole similar to lasagna but instead of pasta it layers with tortillas. Throw a fiesta tonight with this simple and tasty casserole. Serve with shredded lettuce, sour cream and salsa.

Ingredients
  • 1 1/2 pounds ground beef
  • 1 can diced tomatoes (14 oz can)
  • 2 cups water
  • 1 packet taco seasoning
  • 1 can green chilies (small can)
  • 1 cup cottage cheese
  • 2 eggs, beaten
  • 1 cup shredded cheese
  • 1 package flour tortilla (8) or corn tortillas (16)

Preheat oven to 400 degrees F. Grease a 9x13 inch pan.

Over medium-high heat, brown ground beef in a large skillet; drain off fat.

Add tomatoes, water, taco seasoning and green chilies. Simmer on medium, covered, for 10 minutes.

Combine cottage cheese and eggs; set aside.

Place 2 flour tortillas or 4 corn tortillas on the bottom of the pan. Spread with 1/4 of the cottage cheese mixture. Top with 1/4 of the meat mixture. Repeat to create 4 total layers.

Top with shredded cheese.

Bake for 20 minutes.

"I made a few slight changes. I used ground turkey and instead of cottage cheese, which I didn't have, I used cream cheese. It was still delicious! The girls thought the tortillas, being a little moist, were the best part."
