Ingredients
  • 2 cups sugar
  • 2/3 cup butter
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 cup water, room temperature
  • 4 egg whites
  • 1 teaspoon baking powder
Directions
Preheat oven to 350. Grease and flour a 9x13 inch cake pan. Cream sugar and butter thoroughly. Add vanilla. Sift together flour, baking powder and salt. Set aside. Add dry ingredients and water alternately to mixture. Beat egg whites until soft peaks form. Gradually add baking powder to egg whites. Beat until stiff peaks form. Fold beaten egg whites into batter. Pour into prepared cake pan. Bake for 45 minutes or until a cake tester comes out clean. Top cooled cake with Filling for White Cake and Seven Minute Frosting. Note: You can use two 9" round pans but will need to reduce baking time to 25 - 30 minutes.

"What a great cake! This cake has structure but is still moist. The flavor is delicious and tastes like just a cake, not necessarily of vanilla. I do think it needs a tad more salt to round out the taste, though. I'll add ΒΌ tsp salt next time. If I want a specific flavor next time I can add more of a clear extract, such as almond or lemon, or flavor the icing. This is a very good cake and will be the recipe I use from now on. Thank you!"

"This is one of the first cakes I have ever baked from scratch. It turned out great! Of course, I just used a canned frosting . . . maybe next time I will tackle homemade frosting!"
