Ingredients
  • 1 cup brown sugar
  • 2/3 cup butter
  • 1/4 cup corn syrup
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla
  • 3 1/2 cups oatmeal
  • 1 package semi sweet chocolate chips (12 ounce pkg)
  • 1 cup butterscotch chips
  • 2/3 cup peanut butter
  • 1/2 cup almonds - chopped

  • Preheat oven to 375 degrees F.
  • For crust, combine sugar, butter, and corn syrup in a saucepan. Cook and stir on medium-low until smooth.
  • Remove from heat. Stir in 1/4 cup peanut butter and vanilla until smooth.
  • Place oats in an extra-large bowl. Pour brown sugar mixture over oats, stirring gently to combine.
  • Press mixture evenly into the bottom of a buttered 9 x 13 pan. Bake for 10-12 minutes or until edges are light brown.
  • Meanwhile, in the same saucepan combine chocolate and butterscotch chips. Cook and stir over low heat until melted. Stir in the 2/3 C. peanut butter until smooth.
  • Slowly pour chocolate mixture over oatmeal layer, spreading evenly. Sprinkle with peanuts.
  • Cool in pan on wire rack. Chill until set & cut into bars.

"Yummy bars! I liked the oatmeal layer. It was soft but sweet and chewy. The chocolate & peanut butter topping went perfect with the oatmeal layer. The only thing I didn't like was that the oatmeal layer was a little soft, which made it a little hard to cut and remove them from the pan. Once the bars were chilled, they came out fine."
