Pumpkin Date Cake Recipe

Ingredients
  • 1 box spice cake mix
  • 1/2 teaspoon soda
  • 1/4 teaspoon nutmeg
  • 1 cup milk
  • 1 can pumpkin (12 ounce can)
  • 1/2 cup dates, finely chopped
  • 1/2 cup pecan pieces, chopped
  • Topping
  • 2 cups whipped topping
  • 1 tablespoon light molasses
  • 1/2 cup chopped pecans
  • 1/2 cup chopped dates
Directions
Follow directions on cake mix. Add soda and nutmeg. Mix. Then add milk and pumpkin. Fold in nuts and dates.

Lightly oil and flour 2 - 9" round cake pans. Bake 350 degrees for 25-30 minutes. Cool.

Stir molasses, dates and nuts into whipped topping. Spread between layers and over top. Chill several hours. Serve.
