Dried Cherry Scones (low fat) Recipe

Ingredients
4 cups flour
1 cup buttermilk
1 cup Sugar
1 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon almond extract
1 teaspoon soda
2 eggs lightly Beaten
1/2 teaspoon Salt
1/2 cup butter
1 cup dried cherries
Directions
Heat oven 425 degrees, lightly grease cookie sheet. Combine dry ingredients. Cut in cold butter, add dried cherries and mix just until combined. Mix liquids together and stir into dry ingredients. Do not overmix or scones will be tough. Form into 2" balls and flatten to about 1". Bake 12 - 15 minutes. Cool 5 minutes before transferring to cooling rack. Serve warm. Yield 12 scones.
