Upside Down Pumpkin Cake Recipe

Ingredients
  • 1 can Libbys Pumpkin pie mix (30 ounce)
  • 2/3 cup evaporated milk
  • 2 Eggs
  • 1 box yellow cake mix
  • 1 1/2 sticks margarine
  • pecans
Directions
Mix well first 3 ingredients. Pour into 9x13 pan or two round cake pans. Pour cake mix over pumpkin mixture. Melt 1 1/2 sticks margarine. Pour over cake mix. Be sure to cover well to moisten the mixture. Bake 30 minutes at 350. Cover cake mixture with pecans. Bake 30 minutes more. Top with cool whip if desired.
