Pumpkin Roll 78 Recipe

  • Pumpkin Roll
  • 3 Eggs
  • 2/3 cup canned Pumpkin (not pumpkin filling)
  • 1 cup Sugar
  • 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Filling
  • 2 tablespoons Soft Margarine
  • 8 0 Z Soft Cream Cheese
  • 3/4 teaspoon vanilla
  • 1 cup powdered sugar
Directions
Pumpkin Roll:

MIX INGREDIENTS BY HAND. GREASE 10X15 INCH COOKIE SHEET. PLACE WAX PAPER ON COOKIE SHEET. GREASE WAX PAPER. SPREAD INGREDIENTS ONTO WAX PAPER. BAKE IN A PREHEATED 375 DEGREE OVEN. FOR 12-15 MINUTES. BAKE UNTIL DOUGH IS NOT WET TO TOUCH. PLACE LINEN TOWEL ON COUNTER. SPRINKLE TOWEL WITH POWDERED SUGAR. REMOVE ROLL FROM OVEN AND IMMEDIATELY FLIP ONTO LINEN TOWEL. PEEL OFF WAXED PAPER AND ROLL CAKE AND TOWEL TOGETHER. ALLOW TO COOL FOR 1 HOUR. (ROLL THE SHORT SIDE).

FILLING:

COMBINE filling INGREDIENTS AND MIX WELL WITH MIXER. SPREAD ONTO COOLED CAKE AND REROLL. STORE IN REFRIDGERATOR

FOR THE CREATIVE COOK, SUBSTITUTE BANANAS FOR THE PUMPKIN AND ADD CRUSHED WALNUTS TO THE FILLING FOR A GREAT BANANA NUT ROLL
