Crepes Recipe

Whether you have them for dessert or serve them for breakfast, the possibilities with these thin pancakes are endless. Roll them with jam and ricotta, or applesauce and cinnamon sugar, or simply with maple syrup.

Ingredients
  • 2/3 cup cold water
  • 2/3 cup cold milk
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/4 cup butter, melted
  • 1/4 teaspoon salt

In blender, combine the water, milk, flour, eggs, melted butter and salt. Cover and process until smooth. Refrigerate for at least 30 minutes.

Heat a lightly, greased 8-inch skillet. Add 3 tablespoons batter. Lift and tilt pan to evenly coat bottom. Cook until the top appears dry; turn and cook 15-20 seconds longer. Repeat for remaining batter.

Stack Crepes with waxed paper between layers. Cover and may freeze for up to 3 months.

NOTE: Stir and add more milk if batter is too thick.

"We made these and served them with applesauce and cinnamon sugar. Although they are time consuming when you have people waiting to eat them, they are worth the wait. I froze some and will see how they turn out when thawed."
